About End Grain Cutting Board
End grain cutting boards are the highest quality cutting boards available. Unlike regular cutting boards, they are made so that the end grain of the wood is the outermost surface.
End grain cutting boards also have some great features:
- Compared to ordinary cutting boards, it has a harder surface and a longer lifespan.
- The wood grain runs in multiple directions, making it more resistant to warping.
- Because the grain of the wood is perpendicular to the knife, the wood fibers are less likely to be cut, and scratches made by the knife are less likely to occur due to the tendency of the wood fibers to pull together.
- The grain of the wood is perpendicular to the knife, so there is no resistance to the cutting edge, making it gentle on the knife. It also feels good to cut with.
- Because the end grains are lined up, the surface area of the wood's vessels is large, allowing more mineral oil to seep into the interior, preventing moisture from entering from the inside and preventing warping and mold.
When wood warps, the warping occurs in the direction of the surface of the wood. End grain cutting boards have the wood surface twisted in opposite directions around the perimeter, making them resistant to warping.

With grain cutting boards, the knife and wood fibers are perpendicular, so there is less resistance when the knife hits the wood, and it is gentler on the knife itself, so it retains its sharpness less easily.
